Gum Tragacanth
Gum Tragacanth is a water-soluble/dispersible hydrocolloid mixture of polysaccharides, which is obtained from the dried exudate of the roots and stems of various shrubs in the genus Astragalus (from the Astragalus gummifer plant, native to Middle East and Asia). It is used widely for its thickening, emulsifying, stabilizing, texture optimizing and gel-forming properties.
This odorless, flavorless polysaccharide forms a highly viscous gel when mixed with water and is valued for its exceptional chemical stability, long shelf life, and tolerance to heat and acidity.
Tragacanth gum serves multiple functional roles across various industries:
•Thickener and Stabilizer- Creates viscosity and prevents ingredient separation in formulations.
•Emulsifier- Helps mix oil and water-based ingredients to form stable emulsions.
•Binding Agent- Holds ingredients together in solid and semi-solid products.

Gum Tragacanth works very well for hand-rolled fondant and royal icing for cake decoration, it stabilizes ice cream to improve texture and reduce melt rate, thickens salad dressings and sauces, adds body to citrus beverages. It acts as a binder in hard candy and lozenges and fruit-based confections. It is typically used at concentrations of 0.4-0.75% .
For Pharmaceutical Applications, the gum functions as a binder in tablet manufacturing, acts as a suspending agent in liquid medications, and as a demulcent coating for pills.
